Tomorrow I will try to replicate this dish:




Only I'll do it with my own creative twist.
Some butter, when sauteing, then white wine to cool it off when the onions are done ...no pork strips.


I'll sprinkle some cashew nuts, kosher salt, celery, golden pearl onions, celery, white radish, and cubed potatoes, carrots and so on.
I was thinking of using coconut milk, but I decided against it.
Maybe I'll do so another time.

I've purchased everything except a few things.
Tomorrow I'm off to my fish monger for giant clams, and shrimps, scallops, crab meat (perhaps?) and some kind of fleshy fish.
I haven't decided what yet.

Hopefully I will not ruin it.

My take on fish stew/soup, oriental style.
It's still boiling, in the image, and it smells magnificent.

On the side, some rice noodles.
To consume it I will use a spoon and some chop sticks, from a beautiful set my friend gave me as a gift, from Thailand.
A glass of chilled white wine on the side, and some croutons I made, with toast and garlic butter.

I am now making minestrone soup.
It takes 6-8 hours of slow-cooking so I began at 6:00 a.m., after my morning walk.


I know, I'm making a lot of soups lately.

I like soups.
It is getting chilly here so soup is soothing.
And soups are relatively easy to make.

I do cook more solid, and complex stuff, from time to time, but I need to be in the mood and dedicate a half a day to it.

I'll post a pic when I'm done ...in about 4-5 hours from now.

That actually looks quite delicious - so either I'm a good judge of food or that soup is heavenly.

Soup is a staple for a friend of my grandfather's. Soups 5 days out of 7. All organic, etc. She decided to change her eating habits after she got breast cancer. It is so much easier than preparing those fanciful meals.

I haven't given myself the time to practice eating healthy and the more I'm learning, the more I regret each day that passes in which I'm not. Every post made here on this forum showcasing healthy and delicious looking food is continually making it more attractive.

Fettuccine Carbonara

Pasta, eggs, bacon, white wine, ham, Parmesan cheese, cream of mushroom soup (or not), Kefalotyri cheese, mozzarella cheese.
Always add the eggs last over a low heat.
Cook the pasta al dente.

Alternatives
You can then add broccoli, carrots, or any vegetable you like.

I don't know about that Fettuccine Carbonara:no: Even just looking at it.


That meatloaf looks delicious. I use a lot of finely chopped onions and green peppers in mine.
Chicken curry looks great too. Damn I'm now hungry! And actually, the minestrone looks delicious.

Beef tenderloin pan-fried in olive oil and cognac, after a day of marination in white porto wine, nutmeg, salt, pepper, olive oil, water, and red-wine vinegar.

Vegetables (carrots, red and green peppers, mushrooms, onion) fried in oil, sugar, salt, pepper, and finished off with fortified wine.

Basmati rice with a few peas in it for colour.

Caramelized apples, for dessert.

Apples, walnuts, pine-nuts, butter, a touch of cognac (Metaxa, of course), brown sugar, a dab of maple syrup (to keep it Canadian), cinnamon, dried apricots and figs [gifted from a friend oversees], raisins, and in the end some shaved almonds.

Basmati rice cooked in coconut milk, lemon, ginger, salt.
